Grilled scallops and cauliflower mash (278 calories per serve)

I haven’t had scallops for a very long time so I thought I’d just grill some on a low-carb base of cauliflower mash. It’s not as creamy as my creamy cauliflower puree but it’s got slightly lower calories.

Ingredients
600g cauliflower (approx. half a large cauliflower), cut into chunks
1 large onion, diced
20g butter
1 tbsp olive oil
60g bacon, diced
16 scallops (approx 280-300g)
Bunch of parsley sprigs for garnish

Boil the cauliflower and onion for about 10 minutes or until cooked through. Drain and set aside.

Meanwhile, heat up the olive oil on a grill pan and saute the bacon until fragrant. Add the scallops and cook for a few minutes on each side.

Blend the cauliflower and onion with the butter. Season with a bit of salt and pepper.

Lay some of the cauliflower mash on a plate. Top with about 4 scallops with bacon pieces. Garnish with some parsley sprigs and serve.
