Celery Stir Fry with Pork

This celery stir fry with pork is so quick, easy and versatile. I use this as a base recipe for my fridge clean-outs. I like it with celery the best with its crunchy sweetness. I often have celery in the fridge as it’s cheaper for me to buy the entire head, instead of individual stalks. But of course, most recipes only require a few stalks at a time. Give this celery stir fry a try.

Serves 2 or 4 as a side (approx. 190 calories per serve)

Cook time 10 mins

Ingredients
1 tbsp neutral oil
2 garlic cloves, crushed
200g pork mince
1/2 tsp salt
1/4 tsp sugar
1/4 tsp vegetable stock powder
200g celery stalk and leaves, finely sliced
4 eggs, lightly beaten
dash of white pepper

Note: I use a large wok like this.

Heat the oil in a wok or pan and stir fry the garlic until fragrant.

Add the pork mince and brown for a few seconds. Add the salt, sugar and vegetable stock powder and continue to stir fry until browned.

Add the celery and cook for a further few minutes until softened.

Stir in the eggs and stir for a few minutes until cooked through.

Add a dash of white pepper and serve immediately with rice and other dishes.
