‘Picnic pleaser’ potato salad (334 calories per serve)

My friends organised a casual picnic for this year’s Australia Day celebrations so I decided to bring, amongst other things, a simple potato salad. I’ve always loved potato salads, but not the ones at supermarket delis that are absolutely drenched in mayonnaise. I like adding a bit of mayonnaise but not too much as it is such a high-calorie ingredient (but oh so tasty!).

Cook time 15-20 mins

Ingredients
700g potatoes, peeled and quartered
3 eggs, hard-boiled and sliced
70g mayonnaise (I used Best Foods brand as it’s not sweet)
2 stalks celery, sliced
6 sprigs of parsley, chopped
Sweet paprika powder, for garnish

Bring the eggs to boil in a small pot and cook until hard-boiled. After teh eggs have coold, peel and slice them.

Meanwhile, in a larger pot, bring the potatoes to boil from cold water and add a generous amount of salt. Cook for about 10-15 minutes until tender and drain.

In a large bowl, mix together the hard-boiled eggs, cooked potatoes, mayonnaise, celery and parsley. Sprinkle some sweet paprika powder and its ready to serve. If packing away for a picnic, I mix everything into a large Tupperware container, ready to go.
