Chinese Braised Beef Ribs (676 calories per serve)

As unhealthy as it sounds, I would recommend that the beef ribs have some fat on them for the cooking process. You can remove it just before you eat. The calorie count assumes that you remove the fat before you eat it – otherwise it would be like 1,033 calories per serve.

Ingredients
1tbsp canola oil
1kg beef spare ribs, with fat on them
1 onion, sliced
250ml soy sauce
300g brown sugar
125ml rice wine vinegar
500ml beef stock
1/2 tsp sesame oil
5 garlic cloves
4 star anise
2 spring onions, sliced

Heat the oil in a pan and braise the beef ribs until they are browned all over. Remove from the pan – you may need to do this in batches depending on how big your pan is.

Add the onions to the pan and let it cook for about 2 minutes – there should be enough oil in the pan remaining from the beef ribs, but if there isn’t, just add a little bit more oil.

Add the soy sauce, brown sugar, rice wine vinegar, beef stock, sesame oil, garlic, star anise, and spring onions. Stir and cook in the pan for a few more minutes.

Transfer the sauce mixture and the beef ribs into a pot big enough to fit it. Let it simmer for 2.5 hours and the meat should fall off the bone.

You can serve with rice and some stir fried vegetables. These are not included in the calorie count.
