Grilled chicken with mustard, lemon and garlic (292 calories per serve)

Grilling chicken is so easy. It’s so easy to just season it with a bit of salt and pepper that oftentimes I don’t even bother with any other marinade. But today I wanted to try something different but with whatever I had in the pantry … a simple grilled chicken.

Prep time 10 mins
Cook time 20 mins

Ingredients
4 chicken thigh fillets, boneless (skin off)
2 cloves garlic, crushed
1/2 lemon, juice only
1 tbsp maple syrup
1 tsp mustard (any kind)
1 tbsp olive oil

Mix all the ingredients together and let the chicken rest in the marinade until you are ready to grill.

Heat a griddle pan until very hot. Add the chicken thigh fillets and baste every time you turn, a few minutes on each side.

Serve with salad and/or roast vegetables. I served it with roasted sweet potato (which was on sale) and an apple spinach salad. The sides were not included in the calorie count.
