My brother went to Queen Victoria Market over the weekend and brought back a large bag of okra for $1. He said that the best bargains are when the stalls were just about to close. The funny thing was … he doesn’t even like okra. So I guess that means I get to cook the okra!

Ingredients
1 tbsp peanut oil
1 onion, chopped finely
4 cloves of garlic
2cm piece of ginger, chopped finely
3 tomatoes, diced
1 tsp masala
1 tsp ground coriander
1 tsp chilli powder
400g okra, chopped
Coriander, to garnish
Heat up the peanut oil in a pan and saute the onion, garlic and ginger until fragrant.
Add in the tomatoes and cook until it starts to soften.
Toss in the spices, stirring frequently so it mixes well and doesn’t stick to the pan.
Add the okra and let it cook for about 5-10 minutes or until cooked through.
Garnish with the coriander leaves and serve with some basmati rice.
