Avocado and coconut smoothie (140 calories per serve)

Today feels like summer – it’s 34 degrees. This weather reminds me of days in Myanmar and Cambodia. In Myanmar, my mum would make me an avocado smoothie. In Cambodia, my mum would buy a few coconuts from the street vendor and mix it with some sugar and ice. Being in neither country at the moment, I decided to just combine two of my favourite summer drinks into one.

Serves 2 (or 1 if you don’t want to share!)

Prep time 5 mins

Ingredients
1 container of young coconut juice, meat set aside (I used the Money God brand, defrosted)
1/4 avocado
1 tbsp coconut cream

Simply blend everything together into a smoothie. Note that the brand of coconut juice I had was quite sweet. Feel free to add a sweetener, honey, sugar, etc. to your liking if your smoothie isn’t sweet enough.

Then cut up strips of the coconut meat that came with the young coconut juice (not all brands have this) and garnish.
