Yellow okra and lentils (297 calories per serve)


I haven’t had okra in a very long time so when I found it at my local Asian supermarket, I decided to buy some. Then it sat in the fridge for a week while I tried to figure out how to cook it. So here is my experiment with okra and lentils.

Serves 2-3

Prep time 10 mins
Cook time 15 mins

Ingredients
250g okra, quartered
65g lentils
400L water
1 cm ginger piece, sliced
2 tbsp canola oil (or peanut oil)
1 small onion, sliced
1/2 tbsp fish sauce
1/2 tsp tumeric
1/2 tbsp chilli flakes

Heat up the water in a pan until it boils. Add the okra, lentils, and ginger and let it cook.

Meanwhile, fry the onion slices in a separate pan with the oil. Let it caramelise and become fragrant.

Add the onions with the rest of the oil into the pot. Add the tumeric, chilli flakes, and fish sauce and stir through until cooked.
