I had a bit of a lentil craving. I don’t remember the last time I had lentils – two months ago? But I can’t have lentils on their own. I need something green to go with it – that’s healthy right? So I was wandering around the supermarket looking for something green. Snow peas were on sale. OK, I’ll take that. But it needed a kick to it, like some chilli. OK, I’ll grab that too. And it has to be aromatic. Ginger? What’s the smallest piece? 2cm? I suppose that would do. Then came this – a very simple recipe!

Ingredients
1 tbsp peanut oil
2 cloves of garlic, crushed
250g can of lentils (my favourite brand is Annalisa, which comes in 240g)
250g snow peas, sliced
2 chillis (reduce to 1 or leave out if you can’t handle the spice)
2cm piece of ginger, julienned
1 tsp soy sauce
bunch of coriander, chopped
Heat the oil in a wok or pan. Add the garlic, ginger, and chilli. Sauté until they become fragrant.
Add the snow peas. Stir and let it cook for about 5-10 minutes.
Stir in the soy sauce and lentils. Garnish with coriander and serve immediately.
