Thai green papaya salad is perfect for the hot weather we are heading into. I used to only order green papaya salad at restaurants because it intimidated me. I didn’t realise just how easy it was to make! The only thing that takes time is shredding the papaya but even that didn’t take too long with a grater. Once I started making it, it became one of my easiest real crowd pleasers.
Serves 6 as a side (approx. 139 calories per serve)
Prep time 20 mins
Ingredients
1 green papaya, yields approximately 5 cups shredded
4 cloves of garlic
3 red chillies
3 tbsp sugar
15 green beans, sliced to 4cm lengths
12 cherry tomatoes, halved
3 tbsp dried shrimp
4 tbsp peanuts, crushed
3 tbsp fish sauce
1 lemon, juice only
handful of Thai basil leaves
Shred the green papaya and set aside in a large bowl.
Meanwhile, smash the garlic, chillies and green beans in a mortar and pestle. Add this to the papaya.
Add the rest of the ingredients to the bowl and mix. Serve immediately. Easy peasy!
