I made this without thinking about the calories … oops! Sorry, not sorry. We had friends over for dinner and everyone was feeling great but there was something missing … we hadn’t prepared any dessert. We started talking about that time I made a molten lava cake the last time the girls were over and I told them it was actually really easy to make. A quick search in my pantry confirmed I had some quality chocolate around and there was enough ingredients to make a serving of 5. So I whipped this up in about half an hour, much to everyone’s delight. What an easy crowd pleaser!

Ingredients
140g butter
100g dark chocolate (I used Lindt 85% cocoa)
40g milk chocolate
200g sugar
3 whole eggs
2 egg yolks
1 tsp vanilla essence
75g plain flour, sifted
5 ramekins
Preheat the oven to 220C and grease 5 ramekins.
In a large, microwave-proof bowl, melt the butter, dark chocolate and milk chocolate together in the microwave. I zapped it for about 30 seconds, gave a stir and then zapped it for another 30 seconds until it was mixed through.
Then mix through the sugar, eggs, egg yolk and vanilla essence.
Gradually add the flour, making sure to sift so that lumps don’t form and mix until smooth.
Divide the mixture into 5 ramekins and bake in the oven for 10-15 minutes (say 13 minutes). The outside should be crunchy and the inside should still be molten.
Serve with ice cream of your choice (not included in calorie count).
