This is a beautiful dish that can fill the whole room with delicious aromas. When paired with warm, fluffy rice and freshly cooked greens, it feels like a warm hug on a cold winter’s night. However, it does come with a massive amount of calories so it’s not a dish I can have too often. I try to trick myself into thinking I’m having less calories by stripping some of the really fatty bits off before I eat it.

1kg pork belly, cut into 2cm squares
1 1/2 tbsp sugar
3 tbsp light soy sauce
3 tbsp dark soy sauce
2cm piece of ginger, sliced
3 star anise
Preheat the oven to 150C.
In an oven proof dish, mix the pork belly with the sugar and 1 tbsp of light soy sauce until fully mixed through. Turn the heat on and sautee until the sauce has caramelised.
Stir through the ginger, star anise, the remainder of the soy sauce and enough water to cover the pork belly up to half way.
Pop the lid on and place in the oven for 2 hours, checking halfway through in case it dries out.
Serve with warm rice and steamed greens.
