Summer Sizzler Spice Seasoning

When James and I went to London in 2018, we were amazed at how beautiful and ‘old’ the city was. It was summer time, the Wimbledons were being played and England had made it to the quarter finals of the World Cup. The atmosphere was so festive and electric. There were plenty of rooftop bars and barbecues (although some places were so fancy there was a dress code and were fully booked out to the gentry).

We also spent a great deal of time at food halls and department stores where I was just in awe of all the gourmet foods (and their sky-high prices). My favourite department store was Fortnum & Mason, established in 1707 (everything in London has such amazing heritage!). We had the most amazing high tea there and I brought back home their Summer Sizzler spice rub. We ran out of it pretty quickly though so I’ve adapted my own that is similar.

Ingredients
4 tbsp smoked paprika powder (don’t use normal paprika, it has to be smoked!)
4 tbsp salt
2 tbsp cayenne pepper
2 tbsp mustard powder
2 tbsp cumin powder
2 tbsp sugar
1 tbsp cumin seeds
1 tbsp thyme
1 tbsp marjoram (or oregano if you can’t find marjoram)
1 tbsp black pepper

Just place everything together and give it a good shake in a jar. Use liberally on anything you want to barbecue. Enjoy!
