Saucy Meatballs with Lentils and Carrots (420 calories per serve)



I haven’t had lentils in a while and sometimes I just get that craving. They are so yummy and filling and yet don’t have as many calories as rice or potatoes. So here’s a simple recipe that is sure to leave you feeling full and satisfied.

Serves 4

Cook time 45 mins

Ingredients
2 tbsp olive oil
400g beef meatballs, ready-made or make your own (I used Woolworth’s Italian style meatballs)
1 onion, sliced
2 garlic cloves, crushed
2 carrots, chopped
500ml beef stock
1 tbsp tomato paste
400g can of lentils
3 sprigs of parsley, finely chopped

Heat up the oil in a pan and brown the meatballs. When they are done, set aside.

Add the onion, garlic, and carrots to the pan and saute until aromatic. Then add in the stock, tomato paste, and meatballs.

After about 20 minutes, stir in the lentils and let it simmer for a further 10 minutes.

Stir in the parsley and serve.
