Bolognese to Amaze (612 calories per serve)

Everybody loves Bolognese – at least everyone I know anyway. I love it because I can hide as many veggies as I want inside it and nobody is the wiser. I made this one weeknight and my daughter came home from daycare and lapped it all up. She sprinkled some parmesan on each spoonful and sucked up every string of spaghetti. I watched in admiration as she ate everything in record time and even demanded dessert afterwards!

I started thinking maybe she was hungry because she didn’t eat much for lunch. So I asked her what she ate that day and she said … spaghetti! So this was her second serving of spaghetti that day and she told me she liked this one way better. That’s when I knew I was on to a winner – because this Bolognese amazed me by how much my daughter loved it! I hope your kids love it just as much as my 4 year old did.

Serves 6 (or 4 large servings)

Prep time 15 mins
Cook time 40 mins

Ingredients
3 tbsp olive oil
1 onion, minced
4 garlic cloves, minced
1 celery stalk, chopped finely
1 carrot, chopped finely
500g minced beef
400g canned tomatoes
1 tbsp oregano
1 tbsp thyme
3 sprigs parsley, chopped finely
2 bay leaves
125ml red wine
1 tsp salt or to taste
500g spaghetti
Grated parmesan, to serve

In a large saucepan, heat the olive oil and sautee the onion, garlic, celery and carrot until softened. Add the minced beef and sautee until brown all over.

Add the canned tomatoes, oregano, thyme, parsley, bay leaves, red wine and salt then simmer for 40 minutes, stirring every now and then.

Meanwhile, cook the spaghetti according to packet instructions. I like adding olive oil and salt while it’s boiling. Drain and set aside.

Place some spaghetti into bowls and top with the bolognese sauce and grated parmesan. Serve warm.
