This toasted tomato rice recipe was such a hit with my 2 year old daughter that I’ve decided to keep the recipe in the interwebs. My daughter loves rice so long as it is plain and has nothing in it. There have been times where I’ve set down a plate with rice, some meat and some vegetables and she would painstakingly pick out the meat and vegetables and just eat the rice. She would even point at the rice pot to ask me to scoop more rice for her if there isn’t enough “plain” rice in her full bowl.

So I was not expecting her to like this toasted tomato rice that I was making as a side for some grilled lamb chops. This rice must be too full of flavour for her liking, I thought. After a bit of resistance (i.e. bribery with biscuits), she had a few mouthfuls of the rice and loved it. She soon finished the rest of her tomato rice and even ate some pieces of lamb with it so I’m putting this down as a toddler-approved recipe (at least for me). It’s so easy to make in the rice cooker and really complements any grilled meat or vegetable dish!

Serves 4 as a side (approx. 282 calories per serve)

Prep time 15 mins
Cook time 45 mins

Ingredients
2 tbsp olive oil
2 cups basmati rice
1 onion, chopped
1 garlic clove, minced
1 tomato, deseeded and chopped
400-500ml vegetable stock (depending on how firm you like your rice)

Rice cooker

Heat up the olive oil in a large pan and add the dry, uncooked basmati rice. Stir and toast the rice until it starts to brown.

Then add the onion and garlic to the rice and continue to stir. When they have softened, add the tomatoes and continue to cook for a further minute. I love the smell of the rice at this stage!

Remove from the pan and place into the rice cooker. Add the vegetable stock and cook in the rice cooker until done (approximately 40 minutes).

Serve immediately.
