Basic microwave banana cake (248 calories per serve)

Our little bubs is now 5 and a half months old! How time has flown! She’s also starting to discover solids and one of her favourites is banana – which is understandable because it’s so sweet. She could eat a whole banana in one sitting but on this occasion, she was so sleepy she literally started falling asleep after eating only half. So that left me with half a banana that I ended up recycling into this recipe. However, I have doubled the recipe below so you are not forced to use half a banana as in my unfortunate case.

Serves 4 (small serves)

Prep time 15 mins
Cook time 2 mins

1 banana, mashed
1 egg
60g milk
40g butter, melted
70g brown sugar
60g wholemeal flour
1/4 tsp baking soda
1 tsp vanilla essence
Vegetable oil, for greasing

4 ramekins

Mix all the ingredients together in a bowl.

Grease 4 ramekins with vegetable oil and pour the mixture equally into each one.

Microwave for 2 minutes.

Serve on its own or do what my husband did and add a scoop of ice cream and some chocolate buttons (not included in calorie count).
