Chinese pork meatloaf is so easy to make yet absolutely delicious. It has been many years since I’ve had this but it’s one of my favourite homemade past times. It’s also pretty healthy, being steamed. I love it because it’s a bit like eating pork dumplings without the carb-filled skins.
Serves 6 (approx. 212 calories per serve)

Cook time 30mins
Ingredients
500g lean pork mince
5 eggs
2 tsp chicken powder (I use Lee Kum Kee chicken bouillon powder)
2 tsp olive oil
2cm piece of ginger, finely chopped
350ml water
Salt and pepper, to taste
Spring onion, to garnish (optional)
Note: You can use a steamer like this.
Mix all the ingredients together in a heatproof tray that you can use to steam.
Steam the mixture for 30 minutes. Don’t worry if there are bubbles or holes as that’s normal. Garnish with spring onion (optional).
