One pot chicken maryland is the easiest ‘set and forget’ meal for entertaining. I had some guests over for dinner and I wanted something that was easy to make and can cook relatively unattended while I clean up the rest of the house. I also wanted something that had wine in it because I would probably be the only one drinking and I didn’t want to drink an entire bottle by myself. So here is this one pot recipe!

Serves 4 (approx. 410 calories per serve)

Cook time 1 1/2 hour
Ingredients
2 tbsp olive oil
4 chicken maryland pieces, skin-on
2 onions, sliced
8 large mushrooms, halved
3 tomatoes, quartered and de-seeded
1 tbsp tomato paste
500ml chicken stock
300ml white wine
Parsley, a few sprigs to garnish
Tip: I use a large pot with a glass lid for this dish. You can find something similar here.
Wash the chicken and pat it dry. Then season all over with salt and pepper and set aside.
In a large pot, heat up the olive oil. Braise the chicken pieces on both sides until slightly brown and the skin is a little crispy at the edges. Set aside.
Saute the onions, mushroom, and tomatoes for a few minutes with the remaining oil in the pot until it becomes aromatic.
Then pour in the chicken stock, white wine, and tomato paste. Bring to a simmer and add the chicken.
Cover the pot with a lid and let it simmer on low heat for 1.5 hours – or a minimum of 1 hour if you’re in a hurry. Go clean up the house or something while it’s cooking. Check back every now and then though.
Garnish with parsley and serve with a side of roast vegetables or whatever you prefer.
